Couscous with Olives and Sun-Dried Tomato – African

With toasted pine nuts and fresh parsley on top, lovely large pearls of Israeli couscous are tossed in a sauce of sun-dried tomatoes and black olives. No one will miss the meat, but if you want to make this a carnivore favorite, add chicken or prawns.
